What You'll Need

Step 1
Preheat the oven to 450ºF. Line a sheet pan with parchment.
Step 2
Seed and slice the bell peppers. Slice half of the red onion, reserving the rest for another use. Pick the oregano leaves and toss the stems. Slice the sausages.
Step 3
In a large bowl, toss the gnocchi with 2 tablespoons olive oil. Add the bell peppers, red onion, and oregano leaves. Drizzle with 2 tablespoons olive oil, season with salt and pepper, and gently toss again to combine.
Step 4
Arrange the gnocchi mixture in an even layer on the prepared pan. Arrange the sausage slices among the gnocchi and vegetables. Transfer the pan to the oven and roast until the gnocchi are browned and the vegetables are tender, 20 to 25 minutes.
Step 5
Transfer the gnocchi, vegetables, and sausages to plates. Sprinkle with Parmesan, if you have some on hand, grind with pepper, and serve warm.
