There’s nothing basic about these pumpkin spice pancakes. Simply fold pumpkin and warm spices into the batter for a festive fall weekend treat.

What You'll Need
Butter or vegetable oil
Brown sugar
Baking powder
Baking soda
Salt
Maple syrup or powdered sugar
Step 1
In a large bowl, whisk together 2 eggs, 1½ cups buttermilk, 1 cup pumpkin, and 2 tablespoons melted butter. In a separate bowl, whisk together 1½ cups flour, 2 tablespoons firmly packed brown sugar, 1 teaspoon pumpkin spice, 1 teaspoon baking powder, 1 teaspoon baking soda, and ½ teaspoon salt. Add the dry ingredients to the wet ingredients and stir until just combined.
Step 2
Warm a nonstick frying pan over medium heat, and grease with butter or vegetable oil. For each pancake, pour about ⅓ cup batter into the pan, and cook until golden, 2 to 3 minutes per side.
Step 3
Transfer the pumpkin pancakes to plates, and top with more butter. Drizzle with maple syrup or sift with powdered sugar, if you want more sweetness, and serve warm.
