Note: The puff pastry will arrive frozen. Place it in the fridge to defrost for 2 to 3 hours before handling.

What You'll Need
Preheat the oven to 400°F. Set the rack in the center of the oven.
On a lightly floured surface, unfold the puff pastry. Dust your rolling pin and the top of the pastry with flour, and roll the pastry out into a rectangle about ⅛ inch thick. Orient the pastry rectangle horizontally on your work surface. Lightly brush the pastry with olive oil. Sprinkle half of the rectangle with 1 tablespoon za’atar. Fold the un-sprinkled half over the za’atar side, like you’re closing a book. Repeat the rolling and folding instructions, then roll out the folded pastry one final time to about ⅛ inch thick to seal the edges. (If the pastry becomes difficult to work with at any point, pop it in the freezer for a few minutes.)
Cut the pastry vertically into strips that are about ½ inch wide. Twist each strip a few times and arrange on an ungreased sheet pan, pushing the ends into the pan so that they don’t unravel. Transfer the pan to the oven and bake until the straws are puffed and golden, about 20 minutes. Let cool slightly.
Serve the pastry straws with the garlic yogurt sauce on the side for dunking.
