Toma cheese is a champion melter. Press it between thick slices of country bread with a smear of fresh pesto for a childhood favorite with the flavor turned up to 11.

Cut 6 slices of bread. Trim the rind off the cheese, discard the rind, and thinly slice the cheese.
Brush 3 slices of the bread with olive oil or butter on the first side, then flip each piece and spread with pesto on the second side. Top with a few slices of cheese. Cover with another piece of bread, and brush the tops with olive oil or butter.
In a large sauté pan over medium heat, warm 1 tablespoon olive oil or butter. Working in batches if necessary, add the sandwiches and press down with a spatula (or set another pan on top as a weight). Cook until the cheese has melted and the bread is crispy, turning once, about 2 minutes per side. Cut the sandwiches in half and serve warm.Contains: milk, eggs, tree nuts, wheat.
