Sweet and mild zucchini gets the French fry treatment. Roast until crispy and crunchy, then dunk those veggie sticks into a bright tomato sauce.

Preheat the oven to 425ºF. Grease a sheet pan with olive oil. Cut the zucchini into wide fries, about ½-inch thick.
In a large bowl, beat 1 large egg with a fork, and season with salt and pepper. In another bowl, stir together the panko and ½ cup of the Parmesan. Add the zucchini to the egg mixture and toss to coat. Dip each fry into the panko mixture to lightly coat. Place the coated pieces on the prepared pan. Transfer the pan to the oven and roast until browned, 25 to 30 minutes.
Meanwhile, pour ½ cup of the marinara into a small bowl, and warm in the microwave, 1 minute.
Transfer the zucchini fries to a platter and serve warm, with the marinara for dipping.
