Brown sugar, maple syrup, or honey
Use a vegetable peeler or sharp paring knife to remove the zest from the orange, avoiding the white pith as much as possible.
In a large pot or saucepan, muddle together the orange zest with 2 tablespoons firmly packed brown sugar until fragrant. Add the red wine, ¾ cup of the bourbon, 2 or 3 cinnamon sticks, 2 star anise pods, 1 teaspoon whole cloves, and ½ teaspoon nutmeg. Bring to a very gentle simmer over low heat (don’t let it boil), and simmer to infuse the spices, 15 minutes.
Ladle the mulled wine into mugs and serve warm.
