This hearty plate is inspired by the simple family meals of Turkey, where you’re encouraged to enjoy everything scooped up into a warm pita. So grab one and dig in!

What You’ll Need

Step 1
Preheat the oven to 450°F. Wrap the stack of pita in foil, and place it in the oven to warm, 5 to 7 minutes. Set out the beets on the counter to let them come to room temperature.
Step 2
Meanwhile, in a cast-iron skillet or frying pan over medium-high heat, warm 1 tablespoon olive oil. When searing hot, add the lamb kebabs and cook, turning once or twice, until browned and done to your liking, about 5 minutes total for medium. Transfer the lamb to a plate and let rest for a few minutes before removing the skewers and cutting into bite-size pieces.
Step 3
Meanwhile, set out the hummus and green garlic yogurt for serving. Pick a handful of parsley leaves and toss the stems.
Step 4
When the lamb is ready, spread a spoonful of hummus on the bottom of each plate, and top with the beets and lamb. Drizzle with the green garlic yogurt and sprinkle with a few whole leaves of parsley. Serve with the warm pita for dipping.
