Cucumber

What You’ll Need
Salt and freshly ground pepper
Olive oil
Step 1
Slice the tomato into rounds. Slice the cucumber into half moons. Thinly slice about ¼ cup of red onion, reserving the rest for another use. Pick the mint, toss the stems, and tear the leaves.
Step 2
Arrange the tomato, cucumber, and red onion on a platter. Top with the feta, olives, and torn mint leaves. Season with salt and pepper, drizzle with 2 tablespoons olive oil, sprinkle with ½ teaspoon of dried oregano, and serve.
