Canned Greyhound Cocktails
Whole grain mustard
Roasted scallion vinaigrette
What You'll Need
Salt and freshly ground pepper
Preheat the oven to 400°F. Chill the canned cocktails.
Bring a pot of salted water to a boil. Trim the green beans and cut them in half. Add the green beans to the pot and cook until tender-crisp, 3 to 4 minutes. Drain the green beans and rinse under cold water until cool. Cut the cherry tomatoes in half.
In a large bowl, whisk together 1 tablespoon whole grain mustard with ⅓ cup roasted scallion vinaigrette. Add the green beans and tomatoes and toss to combine. Season with salt and pepper.
Slide the baguette into the oven to warm, 5 minutes. Let the baguette cool slightly.
Slice and split each baguette in half. Slice the brie. Spread one side of each sandwich with whole grain mustard and top with slices of brie and pieces of ham. Cut the filled baguettes in half so you have 4 sandwiches.
To serve, set out the sandwiches, green bean salad, fresh fruit, and macarons. Crack open the canned cocktails, and dig in!
