These gluten-free treats start with upcycled brownie mix from Renewal Mill, made with okara flour, a by-product of soy milk and tofu production. The chocolate-y mix is transformed into soft, chewy cookies, perfect for sandwiching cream cheese frosting and vibrant sprinkles.

Step 1
Preheat the oven to 350°F and arrange two racks to divide the oven into thirds. Line 2 sheet pans with parchment.
Step 2
In a large bowl, use a spatula to stir and smash together 10 tablespoons of melted butter, 2 eggs, and the brownie mix until well combined. Drop the dough onto the prepared pans in 2 tablespoon portions, spacing them at least 2 inches apart. Dip a finger in a bowl of water and gently press each portion of dough into a flat round about 2 inches wide and ½ inch thick.
Step 3
Transfer the pans to the oven and bake until the cookies are no longer shiny and the tops feel set when gently pressed, rotating halfway through, 15 to 16 minutes. Let cool completely on the sheet pans.
Step 4
Meanwhile, make the frosting: In a bowl, combine half of the cream cheese and ¼ cup butter, both at room temperature, and 1½ cups powdered sugar, ½ teaspoon vanilla extract, if you have some on hand, and a pinch of salt. Using a handheld mixer, beat until fluffy.
Step 5
Flip half the cooled cookies over, and top each with a scant 2 tablespoons of frosting. Top with the remaining cookies to close the whoopie pies. Refrigerate until the frosting is set, 30 minutes.
Step 6
Pour about half the sprinkles into a small bowl. Roll the edges of the whoopie pies in the sprinkles so they stick to the frosting. Serve right away or transfer any leftover whoopie pies to an airtight container and store in the fridge for up to 2 days.
