Step 1
Preheat the oven to 450°F and line a sheet pan with foil. Toss wings with a bit of oil (set aside the gelatinous liquid for stock or soup, or discard it) and spread them on the foil pan. Roast for about 25-30 minutes, or until the skin browns to your liking—since the sous vide wings are fully cooked already, this step is to heat them through and crisp them up.
Step 2
When the wings are almost done, melt 4 oz of butter in the microwave or in a small saucepan on the stovetop. Pour it into a large bowl along with the buffalo sauce and stir or whisk until well-combined. Then add the now-crispy wings and toss, or stir with a spoon to coat them evenly with sauce. Dish up along with veggie sticks, ranch dressing, and a big pile of napkins.
