Don't even worry about wrestling with the grill. These super easy sammies taste like summer, piling saucy pork with crunchy slaw on a big bun.
What You Get
Slow-roasted pork (carnitas)
BBQ sauce
Cabbage slaw
Pickled onions
Brioche or pretzel burger buns
What You'll Need
Salt and freshly ground pepper
Apple cider vinegar or white vinegar
Olive oil
Step 1
In a saucepan over medium heat, reheat the pork and barbecue sauce until the sauce thickens slightly and the pork is warmed through, about 5 minutes. Season to taste with salt. Set aside and keep warm.
Step 2
Meanwhile, place the slaw mix in a bowl. Drizzle with 1 teaspoon vinegar, a splash of juice from the pickled onions, and 1 tablespoon olive oil. Season with salt and pepper and toss to coat. Let rest to soften, 5 minutes. Toast the buns.
Step 3
To build the sandwiches, place the buns on plates and pile with the barbecue pork and coleslaw. Top with a few pickled onions and serve warm.
