Stuff sticky-sweet dates with tangy goat cheese, then bundle them up in smoky bacon. These festive bites can be assembled ahead of time and baked right before the party gets started.

Step 1
Preheat the oven to 425°F. Line a sheet pan with parchment or foil.
Step 2
Make a small slice in each date and remove the pit (but don’t cut them in half!). Pick the rosemary leaves, toss the stems, and roughly chop the leaves. Cut each slice of bacon in half.
Step 3
Stuff each date with a pinch of the goat cheese, and wrap in a slice of the bacon. Arrange on the prepared pan, seam-side down. Grind with pepper and scatter with the rosemary.
Step 4
Transfer the pan to the oven and roast until the bacon starts to crisp, 10 minutes. Flip the dates and continue to roast until the dates are gooey and the bacon is crispy, 8 to 10 minutes longer.
Step 5
Transfer the bacon-wrapped dates to a platter and serve warm.
