Heirloom apples are baked into this not-too-sweet upside-down cake, made with with buttermilk, brown sugar, buckwheat flour, and spices. This cake is outstanding at room temperature or straight out of the fridge, and we've tested it for all meals (breakfast through midnight snack) with very positive results—not even a crumb left behind.
