As Kneaded Bakery is a "CSB"—that stands for Community Supported Bakery, of course! It's owned and operated by Iliana Imberman Berkowitz, who draws inspiration from California's sourdough bread culture and the rich tradition of breadmaking in her Jewish heritage. She spent years honing her craft in bakeries and restaurant kitchens on both coasts. As Kneaded produces naturally leavened loaves using a sourdough starter or a preferment, which allows a long fermentation process to take place as the loaves rise. This results in deep, complex flavors and well-developed gluten structures, translating to a delicious and toothsome loaf at the end of the bake. Iliana is proud to bake loaves that blend cultures and fill bellies every day.
