Altair grass-fed Wagyu combines the marbling and sumptuous texture of traditional Wagyu with the clean minerality of 100% grass-fed, pasture-raised cattle. Carefully selected Tajima Wagyu bloodlines are combined with British and European dam lines. Then, only the best grass grazing regions across Tasmania, Gippsland, and the Limestone Coast of South Australia are selected. Those known for their year-round rainfall, volcanic soils, and ideal climate for growing high-quality pasture. Lastly, 30 months of patience, allowing cattle to grow naturally in a relaxed environment- much longer than typical beef programs. The result? The texture and melt-in-your-mouth experience of traditional Wagyu with the clean flavor of grass-fed beef.

Compared to grain-fed wagyu, the marbling in Altair grass-fed Wagyu is finer as the animal grows naturally over a longer period, grazing only on grass. This finer marbling creates a unique melt-in-your-mouth eating experience as when cooked the marbling (fat) melts evenly throughout the meat. Wagyu marbling also has a lower melting point and higher ratios of mono-unsaturated to saturated fats.

This program is committed to improving the lives of farm animals in food production from birth to slaughter. The Certified Humane label assures consumers that animals are raised by high animal welfare standards. Altair cattle are also raised and fed a diet in compliance with the Non-GMO Project Standard for the avoidance of genetically engineered ingredients.
